Two single chicken fillets, cut into chunky cubes
One clove garlic
One teaspoon curry powder
3-4 tablespoons yoghurt
handful of roasted & salted cashew nuts
Put a little bit of oil in the bottom of a microwave-safe dish with a lid. Chop or crush garlic and add to the oil. Add curry powder. Mix and mush up garlic. Add chicken and mix.
Put lid on the dish and cook in microwave on high for two minutes. Stir and loosen up pieces of chicken. Cook for another two minutes. At this point, the chicken should be just cooked. If there are pink bits left, cook for another minute. Add yoghurt and stir. Cook for another minute. Add cashew nuts just before serving.
We usually have this with brown shortgrain rice and broccoli or beans.
